#Tikka Masala Couscous

300g Couscous
125g Water
100g Garden Peas
125g Cooked Onion chopped
100g Carrots
250g Rich Sauces Tikka Masala Sauce

Place the couscous in a bowl, add the hot water and sauce leaving 50g of sauce to stir in when assembling the salad.
Cling film and leave for 10-15 minutes to rehydrate.
Break up with a fork and fold in the other ingredients.

 

#Chicken & King Prawn Skewer

2 Chicken Fillets
16 King Prawns
1 Pepper
1 Red Onion (Medium Sized)
250g  Couscous (cooked)
200g Alfee's Sweet Mango Sauce
100ml Coconut Milk

Cut the chicken into cubes about 3cm wide. Dice the pepper and onion. Wash & Peel the king prawns. Start to load the skewer, alternating between the cubes of chicken, peppers, prawns & onions. Repeat until all the meat and vegetables are used.
Gently brush with oil (or use 1 cal spray) &  place in the middle of the plate, top with the skewers & drizzle the sweet mango curry sauce over the top.
Chefs Tip: For a different texture, add some toasted coconut shavings as a garnish.
